I can hardly believe that we are already at our third and final week of #SummerFriday celebrations featuring Mission Avocados with fun and unique summer recipes! (Check out week 1 and week 2 here). Now, if only the rest of 2020 could move along as swiftly ;)… anyone else ready for a fresh new year and start? I know, I know, it’s only August. So, in the meantime, let’s distract ourselves with another fun, easy, and nutritious avocado recipe, shall we?! How does avocado tostadas sound?!
Onto Week 3
Week 1 we started with the essentials (i.e. dessert) to include chocolate avocado pudding pops. Week 2 we moved onto breakfast with avocado pancakes. So, naturally, we are wrapping up week 3 with none other than a family dinner for all to enjoy!
Move over Taco Tuesday, summer Fridays are the perfect night for a spin on a family favorite. Everyone loves tacos, nachos and enchiladas, but tostadas- specifically avocado tostadas, are an often forgotten Mexican meal that’s fun, simple and delicious. Set up as a build-your-own bar, they’re not only loved by children, but they are incredibly easy for parents to prep as well. Win-win!
Avocado Tostadas
In order to accomplish these delicious avocado tostadas, you’ll you need to first bake the tortillas. Next you’ll prep the fixings (your imagination and tastebuds are the limit). Now it is time to let the family dive in to build their own creations. Once the building process is complete (your children will love that step!), send the tostadas back to the oven for a short time to melt the cheese. Finally, top with a heavy dose of Mission Avocados – sliced fresh or in guac form – and you have an easy summer meal the entire family will enjoy! Hows that for an #AVOccasion?!

Ripe Stage 4 or 5… Say What?
Did you know that avocados are not only categorized into ripeness stages, but that certain stages are best for certain creations? No?… Me neither! Avocado Tostadas

Ingredients
- 4-6 corn tortilla
- Cooking spray (EVOO, avocado, etc.)
- Garlic powder
- Mexican seasoningÂ
- 1 can of refried beans
- Protein of choice (shredded chicken, pork, shrimp, carne asada, black beans, etc.)
- Shredded cheese of choiceÂ
- Mission Avocado (sliced or guacamole)
- Salsa (optional)
- Fajita veggies (optional)
- Corn (optional)
- Pickled cabbage or radishes (optional)
- Lettuce (optional)
Instructions
- Preheat oven to 400 degrees.
- On a baking sheet, lightly spray tortillas on both sides with cooking spray. Pro tip: Line your baking sheet with aluminum foil or a silpat mat for easy cleanup.
- Sprinkle garlic powder and Mexican seasoning on both sides.
- Lay tortillas on the baking sheet and cook for 8-10 minutes, flipping halfway through.
- Pull sheet from oven and reduce oven heat to 350 degrees.
- Spread refried beans in a thin layer over each tortilla. Top with protein of choice, cheese, veggies, etc.
- Return to the oven until the cheese is melted.
- Remove from the oven and transfer to a plate.
- Top with fresh Mission Avocado slices or guacamole, and enjoy!
