In this family we do pancakes. LOTS of them! Yet most recently we’ve done pancakes like never before- avocado pancakes!- and the kids can’t get enough!
Avocado Pancakes
With the kids at home, summer breakfast begs to be a little more fun. Pancakes are just that- a little treat to mix up the usual breakfast routine, yet quick enough to keep the morning moving. Typically made of just flour, sugar, egg and milk; pancakes can sometimes lack the nutritional value I prefer to give my family. That’s where avocado pancakes (specifically Mission Avocado Pancakes) come into the mix (pun fully intended 😉). Mission Avocados lend a smooth creaminess to the batter, while providing heart-healthy nutrients not typically found in your traditional pancakes. Win-win for both moms and kids alike!
While a homemade pancake mix is lovely, and can be customized based on your dietary preferences; I’m a big fan of easy and simple. As a result, this recipe is made with boxed pancake mix in an effort to shave time (but not nutrition) on those busy mornings.

Furthermore, I find myself a little more lenient on the sugar add-in front when I know my children are receiving the nutritious benefits of avocados.

Want to save even more time? Don’t forget about the benefit of batch cooking and food prep! While you are out shopping, be sure to add a few extra Mission Avocados to your shopping list and bulk up your preparations. After creating a few extra batches you can simply freeze and save for the future. Simply allow pancakes to cool entirely, then store in a gallon freezer bag with parchment paper between the cakes. Transfer to the freezer and microwave or toast to thaw for an even quicker breakfast in the future.

Avocado Pancakes
Easy avocado pancakes that your children will love!
Ingredients
- 2 cups pancake mix
- 1 cup water
- 1/2 ripe Mission Avocado
- Butter or non-stick spray of choice
- Optional: Mix-ins of your choice (chocolate chips, fruit, cinnamon sugar, etc.)
Instructions
- Pour pancake mix, milk and avocado into the blender.
- Blend for 1-2 minutes, or until the batter is smooth.
- Note: If you want to mix in anything with your pancakes, now’s the time. Be sure to wait until after the batter is blended.
- Heat pan on med-low until warm.
- Pour roughly ¼ cup onto the pan and put the lid on. Now is a great time to prep the pancake toppings!
- Wait until the bottom is lightly browned and cooked halfway through until flipping. Because of the healthy fats in the avocado, slow and steady is best for these to be heated equally throughout. These will likely take longer to cook than regular pancake batter.
- Once cooked through, transfer to a plate or warm oven until ready to eat.
- Top with favorite toppings. Ideas: classic butter and syrup, fruit, chocolate chips, whipped cream, sprinkles - whatever your family loves!
